The Parador de Chinchón occupies a former
Augustinian convent, with large windows, beautiful common areas and a charming
interior courtyard surrounded by gardens.


Its rooms are decorated with warm colours
and elegant, simple furniture, with wooden beamed ceilings in some cases, and

The Parador has several gastronomic areas,
such as El Bodegón restaurant, where you can enjoy its exclusive Taba stew. Its
restaurant El Convento also serves typical dishes such as roast suckling lamb
shoulder, cod au gratin with Chinchón leaves, pisto manchego (similar to
ratatouille) or delicious desserts such as the Augustinian apple tart,
caramelised aniseed cream tart with home-made coffee ice cream, or roast
